Who needs bread? A new way of eating avocado

There are few things in this world as beloved as avocado. This fruit has entered our lives and kitchens like no other and has taken over most food blogs, lifestyle instagrams and even cooking shows.

Truth being told, it makes sense, because Avocados are incredibly nutritious, they have more potassium than bananas, tons of fibre and can help you having a balanced diet.

This summer, the chef of Piccola Cucina in New York, Philip Guardione, has come up with a new way of eating avocado. An unconventional Avocado Sandwich let’s call it. The Avocado takes the role of the bread and it’s the start of the plate.

The recipe is simple and we hope it inspires you to create your own versions.

Ingredients:
1 avocado
Yellowtail carpaccio, raw thinly sliced
Crunchy Quinoa
Thinly sliced celery
Passion fruit sauce
Greek Yogurt

To make the perfect sandwich you need to choose a soft avocado, slice it in half and peel it without breaking. Pass both parts in the crunchy quinoa. Meanwhile, spread the passion fruit sauce and a teaspoon of Greek yogurt on the plate and place a part of the avocado on top.

Add the fresh celery cut into julienne and the thin slices of yellowtail carpaccio. Finally close the sandwich with the other part of avocado, add a sprinkle of crunchy quinoa and season with olive oil and a pinch of salt.

An healthy and tasty dish that unites Sicilian tradition with the new cooking trend.
